Positioning the consumer at the heart of everything we do is central to achieving this. We want to provide an exciting choice for our customers, including choice in flavour profiles and innovation across many different spirits.
Our Grain to Glass journey begins by carefully selecting the best grains, such as wheat, barley, corn, or rye. These grains serve as the foundation for our spirits, providing the raw materials from which we extract the flavours and aromas that make our gin, vodka, and rum unique.
Once the grains are harvested, they undergo a meticulous milling process. This involves grinding the grains into a fine powder, which exposes more surface area and allows for efficient extraction of starches and sugars during the subsequent steps.
Next, the milled grains are combined with warm water in a process known as mashing. This step activates enzymes present in the grains, which convert the starches into fermentable sugars. The result is a sweet liquid known as the mash.
The mash is then transferred to fermentation vessels, where carefully selected yeast is added. The yeast consumes the sugars in the mash and converts them into alcohol through fermentation. This transformative step is where the flavours and character of the spirits begin to take shape.
After fermentation, the liquid is distilled to purify further and concentrate the alcohol content. Distillation involves heating the liquid and collecting the vapours that evaporate at specific temperatures. This process removes impurities and enhances the desired flavours and aromas.
A unique step called “distillation with botanicals” is introduced for gin production. Botanicals, such as juniper berries, coriander, citrus peels, and various herbs and spices, are added to the distillation process. These botanicals infuse the spirit with distinct flavours, creating the complex and aromatic Juniper-led profile that defines gin.
Once the distillation process is complete, selected spirits, such as our rums and specialist Sloe Gins, are aged in oak barrels. This ageing process imparts additional flavours and smoothness to the final product. However, for vodka, ageing is usually minimal or non-existent, resulting in a clean and neutral spirit.
Finally, the spirits are carefully blended, filtered, and bottled, ready to be enjoyed by enthusiasts worldwide. Each sip tells the story of the grain, the distillation process, and the craftsmanship that went into creating these exceptional spirits.
